Ingredients
- 1 yellow onion, sliced 1/16″ on mandolin
- 2c heirloom tomatoes, chopped
- 2 tbsp basil
- 4 cloves garlic, minced
- 1 lb sausage or shrimp (peeled, tail-off)
- 1 lb pasta of choice
- 1c fresh grated pecorino romano or Parmesan cheese
- 1 lemon
- 1 c white wine
- half stick salted butter
- 1/4c evoo
- 3c water-
- 2 tsp ground black pepper –
- .5 cup heavy cream, half n half or milk
Instructions
SauteƩ onions, garlic, oil, 1 TB of butter, and tomatoes in large pot on medium high heat until cooked through.
At the same time, cook sausage in fry pan or thaw frozen shrimp in water.
When onions are done e.g. turning light brown, add water and pasta. Pasta needs to be slightly covered by water.
Turn heat on high and stir constantly
When pasta is just about done the way you like it, squeeze lemon, add wine, rest of butter, basil, and cream
Stir stir stir
Add cheese and serve.
